Sweet Potato Chicken Chili
Cold weather + hearty chili = perfect combo.
This sweet potato chicken chili is packed with protein & fiber and is the perfect, easy-to-make dinner for chilly nights! I love meal prepping this - it’s even better the next day!
Ingredients (serves 4):
1 tbsp olive oil
1 lb ground chicken
1 tsp salt
3 garlic cloves, diced
1 medium white onion, diced
1 large sweet potato, peeled & diced into 1” cubes
2 jalapeño peppers, seeded & diced
1 can diced mild tomatoes (15 oz)
1 cup water
1/2 can kidney beans
1/2 tsp cumin
1/4 tsp paprika
1/4 tsp chili powder
avocado, greek yogurt, and/or cilantro, for topping
Directions:
Heat oil in a Dutch oven or pot. add ground turkey & sea salt, breaking it up as it cooks.
Add garlic & onion; let cook for 3-5 minutes.
Add sweet potato, jalapeño, canned tomatoes, water, beans, cumin, paprika, & chili powder.
Cover & cook on medium-low heat for 25-30 minutes or until sweet potatoes are cooked through.
Top with avocado, greek yogurt, & cilantro. Enjoy!!
