Apple Cinnamon Oatmeal Cups

These yummy apple cinnamon oatmeal cups are the perfect meal prep-friendly breakfast for fall! I love eating mine with a drizzle of almond butter for a balanced meal or snack.

Ingredients (serves 12):

  • 3 cups of rolled oats

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1.5 cups milk of choice

  • 1 cup greek yogurt (I use full fat)

  • 1/4 cups milk pure maple syrup

  • 2 medium apples, cored & diced

Directions:

  • Preheat your oven to 350F & grease a muffin tin with some olive oil.

  • Whisk together all ingredients (except apples) in a large bowl until well-combined.

  • Fold in the apples & mix again.

  • Spoon the batter evenly into the muffin tins all the way to the top. Bake for 30-35 minutes.

  • Cool completely before eating!
