High Protein Cottage Cheese Frittata

So many of my clients skip breakfast because they “don’t have time” in the morning. The simple solution: prep breakfast AHEAD of time!

This cottage cheese frittata is packed with protein to help keep you full until lunch and can easily be made at the start of the week to ensure you never skip breakfast again (because it really is the most important meal of the day).

INGREDIENTS (serves 6):

  • 1 dozen eggs

  • 3/4 cup low-fat cottage cheese

  • 2 cups baby spinach

  • 1 bell pepper, diced

  • 1/2 white onion, diced

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • 1/4 cup nutritional yeast (optional)

  • extra virgin olive oil, for greasing the baking dish

DIRECTIONS:

  • Preheat your oven to 375 degrees Fahrenheit and grease a baking dish with extra virgin olive oil.

  • Mix all ingredients in a bowl until fully combined. Pour into the greased baking dish and bake for 30-35 minutes.

  • Pair with fruit or vegetables for a high protein, high fiber breakfast!
