Cottage Cheese Pancakes

These fluffy pancakes are packed with protein and made with only 3 healthy ingredients! They come together quickly and are the perfect way to start the day. Top with extra butter & pure maple syrup!

Ingredients (serves 3):

- 4 eggs
- 1 cup cottage cheese
- 1 cup rolled oats
- butter, pure maple syrup, & fresh fruit, for serving

Directions:

- Add the eggs, cottage cheese, & oats to a food processor and blend until smooth.
- Grease a skillet with some butter over medium heat.
- Drop 2-3 spoonfuls of pancake batter at a time onto the skillet. Cook for a few minutes until each pancake starts to bubble; then flip and cook on the other side until golden brown.
- Serve and enjoy!
