One-Pot Healthy Chicken Pot Pie with Homemade Biscuits
This cozy, one-pot meal is super easy to make and is packed with protein, fiber, & antioxidants. And don’t forget the 3-ingredient high protein biscuits - they’re amazingly fluffy and delicious when dipped in the soup. This meal is my favorite thing to make on a cold day!
Ingredients for the Chicken Pot Pie (serves 5):
- 1 tbsp olive oil
- 1 cup each of: diced celery, diced carrots, diced yellow potatoes (skin-on)
- 1 yellow onion, diced
- 4 cloves of garlic, minced
- 1 tsp dried thyme
- 2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp ground turmeric
- 2 tbsp corn starch
- 2 cups chicken bone broth
- 1/2 cup plain Greek yogurt
- 2 boneless, skinless chicken breasts, each sliced in half
- 1 cup frozen peas
Ingredients for the Biscuits (makes 7 biscuits):
- 1 cup all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup plain Greek yogurt
Directions:
- In a large Dutch oven or pot, heat the olive oil over medium heat. Add in the celery, carrots, potatoes, onion, & garlic; cook for 5-7 minutes, stirring often, until they start to soften.
-Stir in the thyme, salt, pepper, & turmeric. Sprinkle on the corn starch and stir to coat the veggies evenly.
- Pour in the bone broth & Greek yogurt. Mix well to get out any clumps.
- Place the sliced chicken breasts into the pot, making sure they are totally submerged in the broth. Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes, until the chicken is cooked through and the soup starts to thicken a bit.
- While the soup is simmering for 15 minutes, make the biscuits by mixing together all ingredients in a bowl until a dough is formed. Shape each biscuit with your hands and place on a greased baking sheet. Bake for 20 minutes at 400 degrees Fahrenheit, or until the tops are golden brown.
- Once the soup has simmered for 15 minutes, remove the chicken breasts and place on a cutting board. Chop the chicken breasts into bite-sized pieces, or you can shred them with a fork. Return the chicken to the pot and add the frozen peas. Cook for an additional 10 minutes to allow all the flavors to develop!
- Ladle some soup into a bowl and serve with a warm biscuit. Enjoy!
