Skinny Girl Pancakes
You CAN eat pancakes every day and still reach your health and weight loss goals! My “Skinny Girl Pancakes” are made with only 2 nutrient-dense ingredients, plus they’re high in fiber, a good source of protein, and are paleo, grain-free, & gluten-free. I literally eat these every morning! Try them for yourself and you’ll see why :)
Ingredients (serves 1):
-1 banana
-2 eggs
-optional toppings: fresh berries, nut butter, and/or a drizzle of antioxidant-rich pure maple syrup
Directions:
-grease a pan with some butter or coconut oil and turn the stove to medium-low.
-in a bowl, mash the banana. Add in the eggs & mix well.
-pour to batter into the pan and allow to cook for 3-5 minutes, or until the underside starts to turn golden brown.
-carefully flip with a spatula - because these pancakes don’t contain any flour, the batter is more loose and they are a little tricky to flip. It’s ok if the shape isn’t perfect - they’ll still be delicious!
-cook on the other side until done.
-remove from heat and transfer pancakes to a plate. Enjoy with desired toppings!
