Air Fryer Greek Chicken, Potatoes, and Vegetables
My healthy Greek chicken, potato, & vegetable recipe has been a staple in my weekly meal prep routine for years! It’s super flavorful, high in fiber, & packed with protein to help support my health and fitness goals. Best of all, it comes together in just about 30 minutes in my non-toxic air fryer, meaning clean-up is nice and easy :)
Ingredients (serves 3-4):
- 1 tbsp extra virgin olive oil
- 4-5 Yukon gold potatoes, chopped into bite-sized pieces
- 2 bell peppers, seeded & chopped
- 3 plum tomatoes, chopped
- 1 white onion, chopped
- 1 head of broccoli, chopped
- 1 lb chicken breast, cubed
- juice of 1 lemon
- 2 tbsp dried dill
- 1 tbsp dried oregano
- 2 garlic cloves, minced
- sea salt & black pepper, to taste
for the lemon dill yogurt sauce:
- 2 garlic cloves, minced
- 1/2 cup nonfat plain greek yogurt
- juice of 1 lemon
- 1/2 tsp dried oregano
- 1/4 tsp dried dill
- sea salt & black pepper, to taste
Directions:
- Place the cut potatoes in your air fryer with the olive oil & put on the “roast” setting at 400F for 15 minutes.
- Pause the air fryer after 15 minutes and add the veggies, chicken, spices, & lemon juice. Mix well and continue to cook at 400F for an additional 20 minutes, pausing halfway to mix.
- While the chicken & veggies are cooking, make your lemon yogurt sauce by mixing together all ingredients until smooth.
- Once everything is done cooking, serve with lemon yogurt sauce, fresh parsley, and an extra squeeze of lemon!😋
