Pumpkin Waffles

These pumpkin waffles are the perfect healthy & easy-to-make fall breakfast! I use my Dash Mini Waffle Iron , but feel free to make these into pancakes on a griddle if you don’t have one.

Ingredients (makes 3 servings):

  • 3/4 cup pumpkin puree

  • 2 tbsp flaxseed

  • 5 tbsp water

  • 2/3 cup milk

  • 2 tsp vanilla extract

  • 1 tbsp pure maple syrup

  • 1 1/2 rolled oats

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 1/4 tsp salt

Directions:

  • Add all ingredients to a food processor or blender and blend until smooth.

  • Heat your mini @bydash waffle iron with some butter and place a few tbsp of batter into the iron. Cook until totally done. Repeat with the rest of the batter!

  • Top with butter and maple syrup!
