Egg Bites

These high protein, low effort egg bites are my favorite meal prep-friendly breakfast for busy mornings!

Ingredients (makes 12 standard size egg bites):

-8 eggs
-1 cup 2% cottage cheese
-1/4 tsp salt
-pinch of black pepper
-1 tbsp nutritional yeast (optional - you can also add in 1/4 cup of your favorite shredded cheese)
-1/2 cup chopped veggies (I used a combo of baby spinach & scallions)

Directions:

- Grease a muffin tin with olive oil
- Preheat the oven to 350 degrees Fahrenheit.
- Blend all ingredients together until smooth.
- Bake for 20 minutes & keep in the fridge until ready to eat.
