The Healthiest Chocolate Chip Cookies Ever
These are truly the healthiest cookie recipes ever - packed with fiber, heart-healthy fats, and fiber from oats, nut butter, and ground flaxseed. Plus, they’re naturally sweetened and contain no refined sugar!
Ingredients (makes 12 standard size egg bites):
- 1 egg
- 1/4 cup nut butter (almond, cashew, peanut, tahini, etc)
- 3 tbsp extra virgin olive oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 1/4 cup rolled oats
- 1/4 cup almond flour
- 3 tbsp coconut sugar
- 2 tbsp ground flaxseed
- 1/2 tsp baking soda
-1/2 tsp sea salt
- 1/2 tsp ground cinnamon
- ½ cup dark chocolate chips
Directions:
- Whisk wet ingredients in a large bowl.
- Add in all dry ingredients + chocolate chips & mix well.
- Drop cookies onto a greased baking sheet using a tablespoon. Bake for 11-12 minutes at 350F.
