Gluten-Free Lemon Olive Oil Cake
This healthy lemon olive oil cake is so light, refreshing, & subtly sweet — making it the perfect summertime dessert🍋☀️
It’s gluten-free, dairy-free, & naturally sweetened with pure maple syrup - so you can feel good about eating a slice (or 2…or 5).
This cake is heart-healthy and anti-inflammatory due to the addition of extra virgin olive oil - a staple of the Mediterranean Diet that is linked to improved health and longevity.
This recipe comes together quickly with a few wholesome ingredients and is great on its own or paired with whipped cream, fresh fruit, and/or a dusting of powdered sugar!
Ingredients:
2 cups almond flour
1/4 cup extra virgin olive oil
1/4 cup pure maple syrup
1/4 cup lemon juice
2 eggs
1 tbsp lemon zest
1 tsp vanilla extract
1/4 tsp baking soda
optional whipped cream, fresh berries, and/or powdered sugar, for serving
Directions:
preheat the oven to 350 degrees Fahrenheit and line a loaf pan with parchment paper.
add all ingredients (except optional toppings) in a mixing bowl and whisk until well-incorporated.
pour the batter into the loaf pan. Bake for 30 minutes or until a knife inserted into the center of the cake comes out clean.
let cool completely before adding toppings (if using).
