3 Ingredient Healthy Pancakes

This easy, meal-prep friendly recipe was part of my very first e-book and it was a hit!

These plant-based pancakes are only 3 ingredients & ready in under 5 minutes. They’re packed with fiber from whole grain oats and contain a serving of fruit, making them the perfect way to start the day. I include these in my weekly meal prep rotation often!

Try the recipe below (serves 2).

Ingredients:

  • 2 medium ripe bananas

  • 2 eggs

  • 2/3 cup rolled oats

  • optional add-ins: 1 tsp vanilla extract, 1/2 tsp cinnamon

  • coconut oil, for greasing the pan

Directions:

  • blend ingredients together in a high-speed blender.

  • heat a skillet with the coconut oil.

  • drop 3-4 tbsp of batter per pancake onto the pan and cook both sides until golden brown.

  • top with Greek yogurt, nut butter, fresh fruit, butter and/or maple syrup!
