Greek Yogurt Muffins

My Greek yogurt muffins are naturally sweetened and packed with 9 grams of protein each to help manage hunger and upport balanced blood sugar.

Ingredients (makes 12 muffins):

-2 eggs

-1 cup nonfat plain Greek yogurt

-1/4 cup olive oil

-1/4 cup milk

-1/2 cup pure maple syrup (or honey)

-2 tsp vanilla extract

-2 cups all-purpose flour

-1 tsp baking powder

-1/2 tsp baking soda

-1 tsp cinnamon

-pinch of sea salt

-2/3 cup fresh or frozen blueberries

Directions:

-add all wet ingredients to a mixing bowl and whisk well.

-add in the dry ingredients and mix until just combined, being careful not to overmix.

-stir in the blueberries.

-drop the batter evenly into a greased 12-cup muffin tin.

-bake at 425F for 5 minutes, then lower the heat to 350F and continue to bake for 12-15 minutes, or until the tops of the muffins are golden brown and a toothpick inserted into the center of each comes out clean.
