Ingredients (serves 4):
-2 cups orzo, cooked
-1/2 cup sun-dried tomatoes packed in olive oil, chopped thin
-3 tbsp basil, chopped
-1/2 cup Besto pesto, or another seed oil-free pesto
-1 bunch of asparagus, blanched
-1 cup of peas, blanched
-1 lb of cooked chicken, sliced
-sea salt & black pepper, to taste
Directions:
-add all ingredients to a large mixing bowl. Mix well & enjoy! Store leftovers in the fridge.
