Healthy Air Fryer Chicken Parmesan

Typical chicken parm is deep fried in tons of oil, making it super calorie dense and high in fat.
By cooking this recipe in the air fryer instead, I cut down on the fat content by 90% and save hundreds of calories.

This meal is packed with protein, fiber, + flavor - plus it’s made in less than 20 minutes, making it the perfect meal for busy weeknights❤️

Ingredients (serves 4-6):
1 lb boneless, skinless chicken breasts, sliced lengthwise to make 4-6 thin cutlets
2/3 cup Italian breadcrumbs (I used Aleia’s Gluten Free brand!)
2 tbsp grated Parmesan cheese
2 tbsp olive oil
2/3 cup shredded reduced-fat mozzarella cheese
1/2 cup tomato sauce/marinara (I always make my sauce homemade, but Rao’s is a pretty good store-bought brand if needed!)
chopped basil, for serving
Directions:
Mix the breadcrumbs and Parmesan cheese in a bowl.
Place raw chicken cutlets on a plate and drizzle with the olive oil.
Dip the chicken cutlets one by one into the breadcrumb/cheese mixture, making sure to coat all sides evenly.
Place in the air fryer basket and air fry for 5 minutes.
After 5 minutes, flip the chicken breasts and top with the tomato sauce and shredded mozzarella. Air fry for an additional 5 minutes.
Serve with a side salad for a balanced, high protein meal!
