Sheet Pan Gnocchi, Chicken Sausage, & Shredded Brussels Sprouts

I love an easy one-pan meal for busy days! This high fiber, high protein recipe uses just a few simple ingredients and is ready in under 30 minutes.

Ingredients (serves 4):

- 1 package of gnocchi (1 lb)
- 1 package chicken sausage
- 1 bag of shredded Brussels sprouts
- 2 tbsp extra virgin olive oil
- 1/2 tsp vanilla extract
- sea salt, black pepper, and garlic powder, to taste

Directions:

- Preheat your oven to 425F & line a baking sheet with parchment paper.
- In a large bowl, mix together the gnocchi, chicken sausage, brussels sprouts, olive oil, salt, pepper, & garlic powder.
- Spread the mixture out on the sheet pan & bake for 25 minutes, stirring halfway.
- Top with lemon juice, parmesan cheese, & parsley!
